Ingredients
1 can of black beans
1 cup of cooked farro
1 tbsp of Italian Bamba sauce - you can find this at trader joes
1 tsp of italian seasoning
1 tsp of cumin
2 tsp of cumin powder
2 tbsp of oil
1 tbsp of paprika
1 tsp of cayenne pepper
1 tbsp of red chili flakes or to taste
2 tsp of thyme
salt to taste
1/3 cup water
lime juice
Preparation
Directions:
In a small pot boil some water with salt and cook the farro as per instructions on the package
Simultaneously, in a deep pan, take about 2 tbsp of oil and let is heat up. Add in the cumin and let it pop for a few seconds allowing for the flavor to be released
Next, add in the black beans and 1/3 cup of water tp help mash up the black beans
Once the beans are mashed to your liking add in the farro, Italian seasoning, cayenne pepper, paprika, cumin powder, red chili flakes, thyme, Italian bamba sauce, and salt to taste
Cook the mixture for about 4-6 minutes
Stuff the tortillas with this mixture, layer on some enchilada sauce, top it off with cheese and bake as per your liking
Plate it with some fresh guacamole and a fresh squeeze of lime, say a little prayer and enjoy this healthy yet flavor full meal
