Ingredients
Sweet Potato:
Water
3 sweet potatoes
1 tsp oil
salt to taste
black pepper to taste
Filling:
1 can of corn kernels
1 plum tomato diced
1/2 red bell pepper, green bell pepper diced
1/2 jalapeno diced
1 cup of diced cucumber
1/3 cup of pomegranate seeds
1 tsp red chili powder
1 tsp cumin powder
1 tbsp chaat masalo
salt to taste
1/2 cup roasted masala peanuts
1/2 chopped cilantro
1/2 lemon juice
1 tsp lime juice
1/2 cup masala bundi
Preparation
Sweet Potato:
Boil 3 sweet potatoes
Cut in half and do not peel
take out the meat from the sweet potato to create room for the filling
Add some oil, salt, and black pepper
Sweet Potato Filling:
In a big mixing bowl mix together all the vegetables: corn, tomato, bell peppers, jalapeno, cucumber, pomegranate seeds as well as the masala of red chili powder, cumin powder, chaat masalo, salt to taste, roasted masala peanuts, cilantro, lemon juice, lime juice, and masala bundi. Mix all of this really well
In one half of sweet potato take out some of the potato meat to create room for the filling. Spread the filling into the sweet potato to your desired amount
Sprinkle on some black salt and red chili powder
