About the Recipe
Lasagna Roll-Ups are a creative twist on the traditional lasagna. Instead of layering sheets of pasta with sauce and cheese, each lasagna noodle is individually rolled up with a filling of ricotta cheese, spinach, and vegetables, then baked in a rich marinara sauce and topped with melted mozzarella cheese. These roll-ups offer all the flavors of lasagna but in a more manageable, portioned form, making them ideal for serving guests or meal prepping. Does it take more time? ABSOLUTELY!! However its definitely a crowd pleaser and just makes your dish elevated

Ingredients
1 box of cooked lasagna
1 bottle of prego sensitive marinara sauce - adjust the sauce per your liking
1 pack of shredded mozzarella cheese
Ricotta Cheese Mixture:
2.5 cups of finely chopped spinach
2 15oz ricotta cheese tubs
1 tbsp red crushed pepper - or to taste
1.5 tsp mint - fresh or dried
1.5 tbp cayenne pepper - or to taste
1 tbsp Italian seasoning
1/2 cup shredded pepper jack cheese
salt and pepper to taste
Eggplant Topping:
1 Chinese eggplant, cut into thin circle slices
2 tbsp olive oil
1/2 cup plain bread crumbs
1/2 tsp mint
1/2 tsp cayenne pepper
1/2 tsp italian seasoning
1 tsp red crushed pepper
salt and pepper to taste
Preparation
Ricotta Cheese Mixture:
In a mixing bowl take ricotta cheese, spinach, red crushed pepper, mint, cayenne pepper, italian seasoning, shredded pepper jack cheese, black pepper, and salt to taste. Mix all these ingredients really well.
Pro tip - adding less salt here is best so it does not release too much water while baking, otherwise add salt at the very last when you are ready to assemble the rolls
Eggplant Topping:
In another mixing bowl, add in the thin slices of eggplant, 1 tsp of salt, and let this sit for 15 minutes to release all the water content
Drain the water and place the eggplant into the air fryer at 350F for 4-5 minutes or till slightly crisp
In the same mixing bowl, take bread crumbs, mint, cayenne pepper, italian seasoning, red crushed pepper, salt and pepper and give it a good mix
Throw in the eggplant into this mixture and mix really well so that the eggplant slices have a nice even layer of the seasoning on both sides
Place the seasoned eggplant back into the air fryer for 2 minutes at 350F
Lasagna Roll Ups:
Cook the lasagna as per instructions on the box
Coat a casserole pan with a thin layer of the prego sensitive marinara
On a baking sheet take a few lasagna sheets, lay them out, and spread an even layer of the ricotta mixture. Sprinkle some shredded pepper jack cheese, layer on the eggplant, and evenly spread 1 tbsp of sauce
Roll the lasagna into a log and place in the prepared casserole dish
Repeat step 3 & 4 for the remainder of the lasagna sheets
After the entire casserole has been filled, layer on more sauce over the lasagna rolls
Sprinkle on mozzarella cheese as per your liking
Place a foil over the casserole tray, place the tray into the pre-heated oven at 350F for 20 minutes
