Tropical Fiesta Bites are a colorful and flavorful snack packed with the fresh, vibrant taste of the tropics. Made with hearty black beans, crisp bell peppers, sweet corn, juicy mango, and creamy cheese, these bites are brought together with a delicious blend of savory seasonings. Every bite offers a perfect balance of sweet, savory, fresh, and cheesy flavors—making them a fun and festive choice for any occasion.

Ingredients
1 cup black beans, drained and rinsed
1/2 cup corn, drained
1/2 cup red bell pepper, finely diced
1/2 cup yellow or green bell pepper, finely diced
1/2 cup fresh mango, finely diced
1 cup shredded cheese — cheddar, Monterey Jack, or Mexican blend
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/4 teaspoon smoked paprika
Salt and black pepper, to taste
1 tbsp cream cheese
1/3 cup goat cheese
1 tablespoon lime juice
1 tablespoon chopped cilantro, optional
12–16 small tortilla cups, wonton wrappers, or mini tortillas or Phyllo cups
Preparation
Prepare the filling: In a bowl, gently mix the black beans, corn, diced bell peppers, and mango.
Season: Taco seasoning cumin, chili powder, smoked paprika, salt, pepper, and lime juice. Stir gently so the mango stays intact.
Add cheese: Fold in about half of the shredded cheese, cream cheese, goat cheese
Prepare the cups: Place phyllo cups onto a baking tray
Fill: Spoon the tropical mixture into each cup, filling them about ¾ full.
Top with cheese: Sprinkle the remaining cheese over each bite.
Bake: Bake at 375°F (190°C) for 10–12 minutes, or until the edges are crispy and the cheese is melted and lightly golden.
Finish: Let them cool for a few minutes. Top with fresh cilantro and an extra squeeze of lime if desired.
