Some of the best meals come from those moments when you’re standing in the kitchen, not quite sure what to make, but craving something fresh, filling, and comforting. That’s exactly how this Tempeh Veggie Stack came to life. It started with a few simple ingredients—some tempeh in the fridge, a handful of crisp vegetables, and a good loaf of bread—and turned into something surprisingly satisfying.
There’s something special about the way the savory, slightly nutty tempeh pairs with fresh, crunchy layers and a creamy spread. It’s the kind of sandwich that feels both nourishing and indulgent at the same time. Whether you’re new to tempeh or already love cooking with it, this recipe is an easy, delicious way to bring more plant-based goodness into your day.

Ingredients
Tempeh
1/4 cup soy sauce
2 tbsp sweet & sour sauce
1 tbsp chipotle southwest mustard
1 tbsp red chili sauce - kukdo(sambhal)
Sliced veggies of your choice(i used bell peppers, zucchini, & mushrooms)
1 tbsp olive oil
1.5 tsp Italian seasoning
Salt to taste
Red crushed pepper to taste
Subs
Pepper jack cheese
Vegan mayo
Preparation
1. First cut your tempeh into thin rectangle slices
2. In a mixing bowl add in the soy sauce, sweet sour sauce, chipotle southwest mustard, red chili sauce, and give it a good mix.
3. Put the tempeh rectangle slices into the marinade & make sure each rectangle slice is covered. Let this sit for 30 minutes. The longer you let it marinade the more flavor tempeh has
4. In the meantime let’s prep the veggies: in a pan on medium to high heat, add olive oil, all the sliced veggies, Italian seasoning, red crushed pepper, salt, and about 2.5 tablespoons of the marinade liquid. Cook the veggies till desired liking
5. Once the tempeh has marinated, in the same veggie pan put the slices & cook till both sides are nice & tender. Approximately 15 minutes. i flipped them 3 times & on the 3rd flip also added 1/4 cup of water for the tempeh to really soak in all the flavors.
6. Sub prep: take a sub, spread light mayo on both sides and toast it mayo side down on low heat
7. Flip the sub once it’s nice and golden brown, layer on some pepper jack cheese & let it just barely melt.
8. Add a bit more mayo if desired, layer on the tempeh, & the veggies. And that’s it!!
9. Say a little prayer & enjoy while it’s nice & hot
